
Brut Sparkling Wine

This was a very unique project for Henry Estate as we produced the Brut in a traditional Methode Champenoise style. Pinot Noir and Chardonnay grapes were picked in 1989 and 1990, crushed and pressed and aged in stainless steel drums. In 1992 we Blended these cuvee wines together, added sugar and yeast and then bottled the wine capped tight to allow natural fermentation to occur in the bottle. After this process, the bottles were left to lay en tirage (on their side) for five years. In 1997 we disgorged the wine (removed the sediment), corked and labeled it. This was a seven year project that resulted in the release of a crisp, dry, wonderful sparkling blend of both Pinot Noir and Chardonnay. The production was extremely limited: 67 cases total.
